Any suggestions for something like an old fashioned but without the sweetness?  I usually just do bourbon and bitters

I mean... That's pretty much all an old fashioned is. Sometimes folks muddle a sugar cube with the bitters, but I'm assuming you're not doing that. If you're just drinking bourbon and bitters and think it too sweet, I'm going to go out on a limb and say you don't like bourbon.

Try rye whiskey if you want, I prefer it to bourbon anyways, and its a bit less sweet.

What bourbon are you using? Some are sweeter than others.

Also, I second using rye instead of bourbon. More spicy than sweet.

I was at a work party and all they had was jack daniels. the first old fashioned i had was "regular" and way sweeter than i remember them being, so I went to bourbon and bitters after that. i usually like woodford, or for cheaper nights, fighting cock. any suggestions for a good rye?

Rittenhouse BIB and Bulleit for commonly available ryes. Both are between $20-25.

One can do a good aged rum with an Old Fashioned.

If one is opposed to the sweetness of a regular old fashioned, IMO switching to aged rum probably won't work.

I agree to the switch to eye, I find when I don't want anything sweet, a rittenhouse works well. I also normally garnish with a lemon twist instead which I generally prefer with rye.

A taste of my cask aged Trident at four weeks.

Now I'm doing a tiki drink that has several ounces and three different rums, Canton liqueur, orange juice, orgeat and some other stuff.
