Is that duck on the left? You cut the best part out of the picture.

Just ordered 4 lbs of beans. Some for me, some for the mother in law, and some for a chef friend. Should be a good (fat) holiday season.

Yup, duck on the left. Cubed salted pork was already crisping in some duck fat when I took this pic. Been in the oven for 2.5 hours now and smells so damn good.

How did it turn out, Piob?

Last three days: spaghetti carbonara, bucatini all'amatriciana, and today pasta alla gricia.

Turned out excellent. I think duck skin reaches its zenith in a properly done version. We're having the left over tonight.

So, we did a bit of a Kenji. The method calls for the duck pieces to have the skin expose with the flesh nestled. In my first few tries I had the sausage nestled with half exposed. I was wondering if the sausage turns out better completely submerged in the beans or with half exposed. I did a side by side, fully submerged, half exposed. The verdict is the texture and tenderness is better fully submerged but it's more flavourful only nestled with half exposed.
