Dude, go to a spy store buy a pin hole camera and position it in the bathroom so you can monitor who uses the stalls. Yes, you may see things you'd rather not see, but at least it'll provide some answers.

In high school we had a coach who would always do this. There was no office/staff bathroom nearby so he used the locker room. He would pull his pants and underwear all the way down, lean against the wall with one hand, and hold himself to urinate with the other.
When he leaned against the wall he pretty much planked his body at a dramatic angle, making it even more strange and awkward.

At work here, there are a high number of guys who do the 1 hand on the wall thing on the urinal. Anyone do that here? Is your balance affected when you need to piss? I need answers.

There's also a guy here, who unbuttons his pants to piss...do people not know what a zipper is for?

Depends. Seems like a good time to fix your shirt tuck. Or, if you are wearing jeans with a button fly, that's how you do it.

I'm not even sure I could manage it in my jeans (a new pair of raw denim that is still pretty stiff). I could get the buttons apart but then I would have to navigate the zig zag maze that is my boxer briefs' fly at which point it would probably be so squeezed on the sides that I wouldn't be able to pee anyways. Not to mention that I probably wouldn't be able to re-button them without undoing the top button.

Even with jeans and a zip fly (unless they are really high rise) I'd open the top...those zippers are sharp motherfuckers. Dress pants have much safer zippers and much more pliable material so I don't feel the need to unbutton.
