What is the middle picture? Everything looks great! Are those like 3" thick scallops?

Thanks! It is a millefeuille in the process of assembly (before whipped cream added). The scallops were live just that morning, so they stand up a bit taller.

At some hole in the wall in Redlands. The pork belly looks great, but texture didn't match up to appearance. Whatcha gonna do, I was in Redlands after all.
