Chef said it was blended and 'rough strained' spanish olives. Sounds like BS but thats how it's described on the menu.

yellow young carrots. ****, that reminds me... tried (and was successful) at making that EMP lobster dish from the book last week, in Korea (I smuggled snap peas and a flower garnish from Kinokuniya Aoyama) but obviously I wasn't getting the three different colored carrots for the recipe. I had to sub a mix of satsuma sweet potatoes and regular carrots for the puree and settled on baby turnips and baby carrots for the glacee. Taste was fantastic but I wish i had the red carrots. It will haunt me forever.
