Never had a morel and would like to. Should I buy some dried ones or keep waiting one fresh ones? In DC fwiw.

I've never knowingly had dried morels (though I've suspected it at a few restaurants.) IIRC, some of the Wegman's around there tended to have them. Maybe one of the farmers market mushroom people. Check DonRockwell.com.

Hold out for fresh. Especially if you've never had them before. Overall, I find dried mushrooms usually to be near inedible in texture. They are very good for flavoring liquids, though.

I have never seen morels around this part of the world. But we don't get **** in general.

Greenwich Produce in Grand Central Market gets fresh morels but I ain't seen none yet. I suppose I could go down to Eataly but ... you know ...

I've found my own mushroom man. He's getting three pound boxes every other day, until the season's over. Meet him first thing in the morning, right when they're unloading the truck, and get first pick. :D

I picked up some fresh favas yesterday, any ideas or suggestions?


Peeling them is a chore. That said, I'd cook them with some spring onions, asparagus and artichokes + a shower of fresh herbs at the end.

You could also make a gorgeous green fava spread with the beans. I make crostini with fresh fava humus and shavings of pecorino.

Favas + lamb is also great.
