Small plates, unique takes on meat dishes, communal tables, awesome beer list, etc. seems to be a common theme in some of the newer Chicago restaurants - Bristol and Publican come to mind. Great places, always an experience.

That is definitely a big trend in Chicago as of late. Grocery Bistro (RIP), the Bristol, etc etc. Surprisingly, more often than not, they are very well done and the meals are great.

Yeah, duchamp sort of rolls this way too (although they push more toward a traditional 3-course meal)

It would be worth the trip, IMO. I've already made reservations for a return trip.

It was very good...had a strong piggy taste and a good chewiness to the fattier bits.
No offense, but this sounds like the drivel from a food blog written by some uninformed but self satisfied housewife. I guess I mean a little offense, but whatever, I mean offense to the type, not to you. Anyhoo, what in the world does it mean? Is it surprising that pig face tastes piggy, and why do people keep saying stuff like piggy, and in what world is chewy good? How can something have a good chewiness? Outside of dessert, I would associate chewiness with badly cooked. Just my opinion, sorry for the rant.

HAHAHAHAHHAHA I never read these food blogs, but if I had to imagine what they looked like, I'd guess it would be like that.

I said piggy when I ordered at Manresa. My waitress scowled at me.

I said it as a noun. As in "I will have the piggy."

This:
But let me explain it in more Carol-like terms: Beef stock tastes like Chef-Boy-R-Dee ravioli. Veal stock is more velvety than actual velvet. Beef stock is a sweaty, hairy truck driver on the final leg of a cross-country haul, in which he stopped only to sleep, not shower. Veal stock is like standing naked under a gentle waterfall in the sunlight. Beef stock makes your house smell like farts. Veal stock makes your house smell like home.
