Van, wipe on poly is pretty decent and leaves a low sheen. It’s practically indistinguishable from an oil finish but much more durable.
I like oil, shellac and varnish but sometimes they’re more trouble after the fact in modern use since they are more prone to rings from glasses and so forth.
