1. A lot of tailors don't like to use cloth brought in by clients. Some do (it's call CMT, or "cut, make, tailor") but many refuse.
2. You can do this, but it will most likely be expensive and may well take a couple of attempts to nail your fit.

Ideally available in Australia, ideally $100 or less, and ideally with a classic pique body and ribbed collar, rather than some kind of shirt-collar situation.

Yes, double pleats. I haven't shortened them and they come unhemmed, I think at least a 34" leg or above. I have the khaki remaining.

Depends on what you are after. Uniqlo has linen shirts etc, so do a few of the mainstream brands.

I have quite a few sets of Trimly shoe trees. I am typically 9UK and
have a size 9 Trickers that takes either size 43 or 42 shoe trees ok. I’d therefore recommend a 44.

Agree with Davewillbox, a 44 will be the right size.
