Only two snaps I took at Christmas dinner this afternoon. Wife's cousin came through again with the Yule log, and her aunt as usual with the homemade baklava. Not pictured, among other things, the finikia (because I ate most of it and then hid the rest so no one else could get it 🐷).

Hot smoked to 100F then finished in the pan to render fat out and crisp the skin.

Pan sauce of butter, shallots, garlic, hot pepper jelly, and white wine vinegar.

Did not suck.

I received a set of tamagoyaki pans and just had my first go at making some eggs. Just make sure the pan is good and hot, keep up oiling between layers, and just keep building and compressing against the back of the pan. Turned out totally respectable. First batch was three eggs, 1/2 tsp hondashi, tsp shoyu, pinch of salt and pinch of sugar.

Will definitely be put into rotation.

A little late posting these but this was christmas eve dinner. All scratch made for 18 people.

1. Gravlax with creme fraiche
2. Fried shrimp
3. Shrimp cocktail
4. Seafood salad
5. Baked clams
6. Lobster roll
7. Spaghetti with white clam sauce
8. Zuppa di pesce
9. Grilled pizza with sopressata after midnight.

Good God...the gravlax alone would satisfy me, but man what a f-ing good-looking spread. I'll DM you my email address for an RSVP to your next feast.

Dry brining these bad boys all day and will sear on the inferno grill for dinner. I'll make some creamy garlic smashed potatoes to accompany and those will get a portion of the demi I made this last week.

In a nod to healthy eating, baked off broc too.

Had our yearly cooking challenge for New Year’s Eve with a couple were friends with. This years challenge was cubism, so everything in that basic form. To be honest, not that hard, but we’re all a bit tired with young kids and parents that require constant care. Next years challenge to be determined.

From start to finish:
Middle one bottom row: bliny’s with salmon
Left on bottom row: sushi with salmon
Middle on right: pasta pomodoro
Top right: tournedos Rossini with fondant potato’s , beet and carrot in balsamico
Lower right: scrubbing sponge with soap (friend likes to play optical tricks) made from cake and mousse
Big picture: wife made a Piet Mondriaan cake

If anybody has a fun idea for next year I’ll be sure to pitch it.
