Chicken stuffed with truffles, morels, and foie gras. Sauce Albuféra.

Looks classy as the Waldorf Astoria. What is the creamy shell around the chicken?

woah how'd you make the mousse?


I processed some of the breast trimmings with salt, white pepper, and a little polyphosphate. Then blended in some chicken stock, then creme fraiche, and passed through a tamis. Finished with minced truffles and a drop of truffle oil.

I really don't see the harm in using what was literally a drop of the stuff. I used real truffles, as well, if that will make you sleep any better.
