Sadly I have the same issue with the coffee chromepak as I had with the boondockers and have put them up for sale. I'm sad. See sig. They're on grailed as well.

I'm curious what you mean by this - aren't these boots being offered on their website?
Just picked up a pair of the Viberg x Nigel Cabourn Chukkas in size 10, going with a full size less than my "typical" brannock / dress & boot sizing. They feel good in the forefront, but I feel what I suspect is too much heel slippage. Just curious if this is the sort of thing that will be reduced as leather and sole break in, or if they feel like this to start with, they will only get worse...
Thoughts?

I can't see that improving with age. I'd try a thin insole and see if that makes a difference. Also, make sure they are laced up tightly.
In general, doesn't heel slippage reduce as the sole becomes more flexible?
Maybe a tongue pad to add more downward pressure? I feel like an insole doesn't help slip correctly as it's pushing the heel up rather than down.
