how are you gonna hold this thing when not in use? cover in cheese cloth or saran wrap?

Matt, I find that a kilo takes me about a eyar to eat, with two adults the the very rare guest getting a bit. that makes it very economical for me. a couple slices cooked into eggs, or a couple of thin slices with some bread and a little cheese is a great meal.

beautiful. i lived in spain for about 9 months, 3 of those spent in a home that had a leg in the kitchen like that. they covered it with a towel and sliced off little bits to snack on or for sandwhiches. it was incredible.

Is it stable enough after curing to keep out for a year? I guess it is. Growing up we always had saucisson hanging in the kitchen that we ate over long periods of time. Never got rancid.
