Do they use reinforcements in the whole upper?.

Do they mix chrome and veg leather for the lining?

Heel leather stiffener and celastic stiffener for the toe cap?

Toe/Heel are Celastic.

Linings are used to reinforce uppers. Some makers (Vass) uses leather, some makers uses linen/cloth.
Chogall, I see a leather heel/counter stiffener in "that" pic. I see a mixture of chrome and veg leather for lining too.

In between of the upper and the lining, I see some linen/cloth (same as in the first pic ) as a reinforcement.

My cuestion is, are all those linen/cloth reinforcements always needed?. Do they use them just for models with a narrow waist?. As far as I understand, those reinforments are not much used. Thanks.

In the second picture, there's a white sheet of fabric, which is most likely Celastic.

Regarding the reinforcements, I am not a shoemaker so I could only state from my observations.

Most machine made shoes have cloth reinforcements around the vamp area to increase its durability and to retain shape.

As for hand made shoes/bespoke shoes, I know Vass uses leather reinforcements on the side of the vamp, to increase its durability. JLP/Berluti bespoke uses cloth reinforcements across vamp in addition to leather reinforcement strips on the side/edge of the vamp. And they sometimes put thin line of cloth/leather reinforcements around sewing/top line edges
