I've worked with wedding photographers over the years, and although you may have some valid concerns, there's not much you can say that will get them to voluntarily refund a non-refundable deposit. I've seen cases where companies have went under with dozens of couples either having put down a deposit, or having went through with their big day and were waiting for their pictures only to find out they would get nothing. If this company is in financial trouble, the last thing they'll do is give you back your money.
$1,200 seems like an astronomical deposit, did you pay for the entire package up front or something? The store credit, while reasonable from their perspective, doesn't do you any good. How often are you going to need $1,200 of photography services? Also, if you're worried they won't deliver on the wedding, what makes you think they could possibly deliver on any future work?
