Thanks to everyone for their help and suggestions with the knives.
I was really keen on the Global knives due to how highly they were recommended, but was not a fan of the handle. I followed the advice and went to handle a few, and ended up with a lesser known brand, Icel. They were cheaper than Victorinox, but have a slightly higher quality blade, and more importantly were more comfortable. I picked up a paring, chef, and bread knife for $120. I've purchased my first place so am on a bit of a budget, and am very glad I seemingly picked up a bargain.
