I just got the Graham wax jacket and it fits a bit on the big side too. The body is really roomy but the sleeve length is spot on.

I’d probably go S even though M is probably more the intended fit. I really think S looks better from the side.
Is the S comfortable in the shoulders for you?

I think you've got enough layers under to qualify this, but how did your shoulders feel in the S? If you don't feel restricted, I'd probably go with the S. If they felt tight, then with the M.
