Why highest shoes brand still do Book Binder/ polish leather ?

We all know polish leather is a bad leather for long run especially in highest quality leather shoes and consider cheaper leather for shoes

I wonder why super high quality brand like Silvano Lattanzi still use polish calf for their product ? Are they using different method or just trying to fool their customer?

Hasn’t there been quite a lot of conversation here in the past about whether Lattanzi actually is a super high quality brand? Certainly seems to divide opinion.

The issue is, here (SF), in my opnion, everyone has an opinion, but, I think, never a shoe maker of high craftmenship level really did a proper explanation. Thus, we dont know for sure.
