I'm assessing the length of my longsleeve button-down shirts.

For the cleanest look, should the bottom of the front hit around mid-zipper of a pair of jeans?

there's not a single right answer, but generally a few inches below your belt down to mid-zipper works.

Thats like asking how a blue car should drive.

The words "untucked" and "casual" should tip you off there is no single answer

I would say that wearing them conventionally the highest part of the untucked shirt (usually on the sides for shirts with rounded/waved hems) should be no higher than the top of your belt and this same highest part should be no lower than the middle of your pants/jeans backpockets if you are wearing them properly on your waist. But of course theres the avant garde/modernist/deconstructive designers who don't care much for any rules and when it comes to that your best bet is to buy your size/clothes that fit well in one way or another despite creative licenses taken by the designer (pretty much go with your size). I take it this isn't what you're going for though, as you probably wouldn't need to ask this question if it was
