Oh and get a good demarara rum. The other good thing about rum is the value. Theres virtually nothing over 50 bucks that you need to have. You dont have to deal with absurd allotment policies or flippers. You're just at the mercy of distributors.
Any agricole and demerara recommendations?

@edinatlanta Thanks for all the advice - making a shopping list for my next Specs run. Where would the Doorly's XO sit in the taxonomy of rums? I'm reading that it's from barbados and "is molasses based, pot and column distilled, aged for 5 years in ex-Bourbon casks and up to 3 more years in ex-Oloroso sherry barrels. Bottled at 43% ABV without any sweeteners added" and where would I go from here if I want a good sipping rum like this or better? Would the recommendations you provided make for a nice neat drink or are they all best in cocktails?

Also - going to Refuge in Houston for the first time this weekend. I know there are some locals in here, any recs off the menu, guys?

Not a rum expert like some of the others here but Doorly's is well regarded as the less adulated brother to the Foursquare rums, and can be enjoyed neat or in a cocktail.

So doorlys is a fantastic rum. You can use it any time an aged rum is callef for and you dont want funk ("hogo" is the name for jamaican banana like funk. I like it not everyone does. Doorlys [and real mccoy] may be some of the best value rums or spirits out there). The column still is not going to give you as much flavor as, well, any other distillation method but it's still important when you need alcohol.

That's honestly as good as you need to get. Smugglers cove book gets more in depth but the categories kind of don't work (probitas fits in none of them for example and it is a fantastic white rum).

This is what i mean about rum being so diverse and also not worrying. Most white rums you don't want to sip but they are important in cocktails. El Dorado 12 is a great sipper and in cocktails. And because these are all so relatively cheap just try them. I still gravitate towards Smugglers cove guide because i make so many cocktails. Amari are what i primarily sip for spirits.

Does any of that make sense? Just trust your nose and palate you can't go wrong.

Drinks recap from dc trip. This was the archipelago popup. Other than the pineapple of hospitality i thought all my drinks were imbalanced. My gf had a fantastic three dots and a dash and our friends banana daiquiri were good.

Dont remember this one. Might have been the zombie.

i had the doctor funk in the mug at copy cat gf had the prohibition grog. Hers was great mine tasted like nothing bjt anise and i like anise. I couldnt finish the drink which bummed me out because everything else was outstanding.

EW BiB Kentucky Colonel with Reed’s Ginger Beer, lime and Fee Bros Bitters, after a long day at work, which began with 5hrs sleep and waking up early to deal with my backed up plumbing in the goddamn rain… And yes, my 30yo old snake is a ****-show, but got the job done, right before I had to split for work. My teenage daughters have officially been put on single-ply and drain screens from now on.
