I think your revised itinerary sounds great. If you get tired of hostels you can always look for vacation apartment rentals. I went to Amsterdam last year and stayed in Amsterdam apartments for 3 nights. It was nice to have some privacy after a week of hostel hopping around Europe!

I'd take out at least one day from Amsterdam and add it to London. I spent 6 days in London at the beginning of December, and still had plenty of things which I'll do on a future trip. Four days in Berlin seems about right. Since you're already planning on being in the north with Berlin, maybe you could add a Scandinavian country instead of Hamburg. How are you planning on getting around? If you begin in Berlin, it'd be quite convenient to train from Berlin to Amsterdam, Amsterdam to Brussels, and Brussels to Paris/London, as with Globetrotter's plan. I'd only give Brussels a couple of days, but it's definitely a place to visit.

Can you give some more advice on London?

I'm going to Southampton at the end of the month for two weeks for work. While I'm there I get a 4 day weekend since it's good friday/ bank holiday on monday. I'm taking my wife with me and neither of us have ever been to Europe. So we weren't sure if we should just stay in the UK or go down to Paris since we'll likely not get the opportunity to go back any time soon.

there are about 30-40 cities in europe i'd revisit again before london. i wouldnt call it tragic that you've scratched it off your list.
