So I bought a house last week and just found out it has a 500+ bottle wine cellar. Downside - its completely unusable - sits behind a door in the garage with zero temperature control (the thermometer the previous owners installed shows its cooking at 80 degrees currently and 85% humidity - ie the exact exterior weather conditions).

Having had a dedicated wine room built (as I am sure others here have also) this is an easy problem to solve. What’s less easy to solve as whether or not the room has a vapor barrier. You simply install a room cooling unit (vented to the exterior) and ensure the door has a seal.

I have a WhisperKool unit -- I bought larger than what I need for the size of the room and (knock on wood) it's been reliable. If you don't have a vapor barrier in the room, then you can buy a unit with a humidity control as well as temp control.

If you have a spouse / partner you need to convince, the wine room can also serve in a pinch as an overflow temporary cooling area when you host large parties and run out of fridge space on warm days.

I think I'm going to make an effort to drink more wine this fall/winter. At least 1-2 bottles per week. I have a lot of 2012/2013 stock that should be in a good drinking window now.
