Induction sucks, the glass tops always crack and you need induction pans for it to work properly. Gas is where it’s at
Agree. The house we bought two years ago has an induction range. We had to chuck out every saucepan that we had bought over 30 years, all entirely useless. It least it was an excuse to invest in some All-Clads.

Heat is hard to control and it is very difficult to do wok cooking as the pan sides do not hold heat. We've been here less than two years and we're already talking about replacing the stove.

That's really close, target price for me on the 12 inch was 80 and I got it, ebay really is the place to hunt, tbh. Depending on the pan, 12 inch with curved sides might make steaks a little crowded, but the copper cores stainless, do NOT buy the non-stick, are known for making the best fond. I don't know how to cook for **** and made myself a fantastic steak, poured a touch of wine and flour for an easy gravy on the mashed taters. Ignore copper core stainless, it hurts, but it just won't last over time. I got my lady an 8, 10 and 12 inch pan, then the big saute pans 4 and 6 quart. I only paid over 100 for the 6 quart saute with lid, and it came new in box.

Also, you can buy the lids new off amazon (like 40 bucks), all the lids for every line are the same, so don't let a missing lid deter you from a great deal.
I'm now confused by this, are you saying copper core is the best, or are you saying to ignore it and get something else?

I agree that gas is superior in every way. my house doesn’t have gas connected. I didn’t have a cool $7k lying around to have gas connected to the stove and to run the pipes through the house for heating. It’s a ***** to do when the house I’m in is double brick and I’ve redone all the floor joists and flooring. Maybe in a couple of years.

There's two types of copper core, stainless and non-stick. Non-stick surfaces like teflon just don't hold up well over time. Enamel holds up much better, but not as "non-stick."

They weren’t super cheap ($30 for the griddle and $25 for the 3.5 L pot), but they were needed.
