There's always that tension between sharing places you love and wanting to keep them close so you can always get a table. This is a paragraph from a little Quick Guide To Florence I wrote for some friends visiting for the first time:

There area couple of restaurants we recommend wholeheartedly. The first is L’Osteria di Giovanni, between S. Maria Novella and the Arno on Via del Moro. The second is Ristorante Il Profeta, on Via Borgo Gnissanti, 93R. Both are family-run, both offer superb food in a friendly atmosphere. South of the river, we recommend Osteria del Cinghiale Bianco. Note that a lot of restaurants open around 8pm. Italians eat late. Other places are Caffè Gilli on the P Repubblica, which is the place to see and be seen in Florence. Trattoria Sergio Gozzi on the Piazza San Lorenzo is excellent if you’d like to try a place that doesn’t cater to tourists. I mean, no English, no English menu, you are on your own, man. Great food and great ambience, though. Thoroughly Florentine.

I'll be back in Florence for Pitti. As soon as we are checked into our hotel we will head directly to Il Profeta.
