Tonight I spent until dark working on the garage, but before I went out I tossed three chicken breasts into a freezer bag with a little olive oil, lime juice, chili powder, cumin, garlic, and onion. When I came in, I sauteed onion and pepper in oil, added rice, then seasoned with all the above plus a chili. Added half a small can of tomato and water. Sauteed the chicken, added the other half a can and simmer. Removed the chicken and put it on a sheet pan., covered in grated Jack. Put some really late ears of corn on. It took 30 minutes. Last night was Yukon Gold homefries, pan-fried sirloin, and grrenbeans. Friday was a chuckroast with potatoes and carrots.

I've really been just throwing things together lately as I've been putting in so much time at work and then working on the garage when I'm home.

This is my meal of choice, steak cooked in cast iron pan. 2 minutes on each side and finished in at 450 degrees in the oven until perfect. 4 minutes for medium rare.

Serve with ice cold beer.

I had to Google that. Not pictured were the kitchen menials who do my bidding.

I'm about to hit the grocery store and I'm running low on ideas for quick, easy, yet interesting meals. I'm bored with the same ol', same 'ol. Suggestions?

Just cooked something easy tonight. Pork chops, boned in, rubbed with a mild spice rub. Seared both sides, deglace with white wine and chicken stock, add a tablespoon of chopped garlic, then in a 425 degree oven for 7-8 minutes.

In a separate pan, caramelize some sliced onion, add garlic, chinese broccoli, s&p to taste, then chicken stock. Cover for 6-8 minutes. Take the pork chops from the oven, pour the juices into the second pan, let simmer for another minute or two.

Serve pork chops and veggies with some white rice.

This is pretty easy to make, and delicious 9 out of 10 times.

Wasabi mashed potatoes; tenderloin, dry mustard, herbs de Provence, mushrooms, Madeira; carrots, white balsamic. To drink -- ginger ale, gently spiked with Punt E Mes.

Prawns stir-fried with capsicum, cherry tomatoes, broccoli flowerets, spring onion, garlic, ginger and chili. Bit of soy sauce and sesame seeds as well. Add some fresh salad greens just before serving.

Yup, came here to post this. It's tricky to get the egg part right with getting it to mix properly.. But ummm umm good.. I use enriched pasta and make a big batch, and it even tastes good reheated - just sprinkle some olive oil, microwave, and you're good to go. Even tastes great for breakfast - egg and pancetta, how can you go wrong?

I eat this more than any other meal - so easy and simple and even cheap unless you want a fancy steak (a nice 3/4 lbs sirloin works fine for me)

sea salt + crushed pepper on both sides, cast iron pan, over finished. Maybe some melted butter on top, and I usually have some beans or lentil soup or veggies on the side. As a matter of fact I think it's gonna be my dinner tonight. If I do beans, I usually use some of the steak drippings for added flavor.

The Wayfarette and I enjoyed some Eggs Benny this morning. I was short on ingredients for a proper Benedict, so I improvised with biscuits and pancetta. Just a touch of cayenne and lemon pepper in the Hollandaise, garnished with a sprig of chervil.

It's a better summer meal, when ingredients are cheaper and better, but I like pasta with greens. Last night it was ziti with arugula and tomatoes (sauteed in a little olive oil). Simple and very quick. Cook the greens in the pasta water. Yum.

Also, risotto is a good one. Easy to keep the ingredients in the pantry. Takes a little while, and some attention, but not a big deal. I often make it with frozen peas, or mushrooms. Really whatever is handy.

Was inspired and made some up last night.
Deglazed the pan with a cup of white wine and then let it cook down (with the pancetta) which turned out well. I don't think I used enough egg...should have gone up to 4

half a box of spaghetti = 2 eggs, full box = 4.

yeah, I was a full box (though it was 17.4 oz or something) plus a dime or penny-sized extra handful and I gave 3-eggs a try.

Looked a little low and the extra liquid from the wine didnt make up for it when added later...
