Lower stance, single button and moderately high gorge / notch?

Hi All, I'm getting a single-breasted, custom made suit for my wedding (which is going to be relatively informal). This was my reference image:



I'm about 183cm (6') tall and slim, with a slightly longer torso relative to my legs.

I originally wanted a moderately low gorge with wider (~10cm) notched lapels, and a lower stance, single button - as per the image above.

But my tailor can only do a moderately high gorge with a single button suit. I'm wondering if the higher notch and lower button stance might look too long or otherwise incongruent?

My alternative would be to opt for a standard two buttons and then the gorge/notch can be lowered. I could sense this was my tailor's recommendation but I was kind of hung up on the single button.

I do not want a particularly trendy suit - so aiming for balance and moderation.
