    Lets talk about COFFEE

Lots of variables here. 3rd party filters mostly adjust how fast they let the water through, with most of them being much faster than the default tabbed Hario filter. If you can get the Japan-only non-tabbed Hario filters (available from Prima), they're a little faster than the tabbed ones, but...

    Lets talk about COFFEE

I hear you! My freezer is getting full of coffee: I currently have 2 subscriptions, and can't resist all the cool stuff that shows up on Howell or the Fellow coffee drops. The Fellow stuff is especially insidious because you literally have to text 1 character to buy a bag. Nevertheless, I highly...

    Lets talk about COFFEE

I agree that a large volume commercial drip machine will make better coffee than most pourovers: it minimizes all the issues one has with single-serving brews because the volume of water and coffee is so much bigger. Also with Fellow, I'd avoid their version 1 stuff: their V2 stuff tends to be...

I just kopped the new Dark Lilac: it looks like a sheening monster. I have no experience with the original DL. Also got the limited edition Cliff ink and the violet blackberry Safari in EF. I write every night in two journals before I go to bed: a Rhodia Goalbook with my version of bullet...

Bungubox, Itoya, Maruzen Tokyo Pen Shop Quill, Maruzen are among those I'd want to check out. Do you know about the Tokyo Station Pen podcast? It's a great podcast about pen culture in Japan, and he has a map marked with shops: https://tokyostationpens.com/fountain-pen-shops-of-japan/

I went last year, and it was good: lots of really interesting stuff and vendors show up there, and it's organized and spacious. I was in the area for this year's show, but the awful traffic was making me late for something else already, so I ran out of time to drop by.

    Lets talk about COFFEE

I haven't used the Switch, but I've used the Clever, which does a similar style of brewing to the switch. I'd say that they are completely different since the Switch is mainly an immersion brewer, and the Pulsar is mainly a percolation brewer. You could do the bloom in the Switch as a steep, and...

    Lets talk about COFFEE

I've done a few low dosage brews on the Tricolate, and it's tricky, because you not only have to level the bed, but you have to make sure it doesn't punch through the bed with the drips. I normally do 18g, but have done 15g a few times, and 12g once. The 12g brew wasn't bad. On the Pulsar, I do...

    Lets talk about COFFEE

I haven't watched the video, but is he diluting the brew at the end? No bypass is important when extracting, but you can always dilute the extracted liquid to get it to your tastes. Jonathan Gagné who helped design the Pulsar has his own method too. It's not to my tastes so far, but I still...

    Lets talk about COFFEE

It's a paper filter that looks like the same size as the Tricolate, but I haven't compared them yet. It's the dumping of the grounds that's harder than it has to be. The best way I've found is to remove the clear chamber, and then the filter comes out with the puck of coffee. Previously, I was...

    Lets talk about COFFEE

I just got one of the NextLevel Pulsars: https://www.scottrao.com/products/next-level-pulsar It's a hybrid no-bypass percolation brewer, meaning in addition to a design that prevents water from bypassing the coffee bed (cf. Tricolate and the previous gen of the NextLevel), it also has a little...

The Anderson & Sheppard Expatriates Thread

I'm basing my opinion on some photos that were posted here a while ago: they were boxy and shapeless: the total opposite of their bespoke line. I could not believe how bad they looked. Perhaps they've changed since.

I would not get a Steed MTM unless they've completely changed whomever makes them. Bespoke Redmayne is also soft shouldered with drape: it's basically what Mahon was cutting before at English Cut.

Enjoy! They're one of my favorite roasters: the Kenya Mamuto AA and AB coffee are among their best offerings without being crazy expensive.

Affogato means drowned, but that one looks more like an espresso hot tub. I'd still eat it though. A nice touch a local coffee shop adds is to sprinkle some espresso grounds over the ice cream of the affogato.

    Lets talk about COFFEE

RO is not bad, but I think the mineralization really helps bring out the coffee flavors more. The weird thing about mineralization is that you don't need it during brewing: it's just as effective added to the coffee after the brew! But you need different dispensers and concentrates for that...
