I do alot of driving on the NJ tpke and the Garden State pkwy & I gotta agree that NJ cops are pricks especially the state troopers. Am amazed that anyone would put olive oil on a good piece of meat. I'm a fan of salt/pepper, cast iron, 90 seconds each side, then into the Viking broiler until it resists pressure when pushed upon, then out of the skillet to rest for 3-5 minutes.
