It's to maintain the uniform, at all times. The kitchen is based loosely off of military hierarchy and traditions. So I wear a chef's coat (and hate it) to fit in with everyone else. I wear an apron over that so that no matter what I do--- make bread, puree tomatoes, fry fries, or chop herbs...- kwilkinson

This is different than someone getting tipped out. A somm making 35k a year that gets tipped out will make 35k plus whatever tips there are. This isn't even management requiring tipouts.
