     The biggest issue in spoilage for red wines isn't oxidation, it's the increase in volatile acidity, which cold storage slows. Leads to vinegar-like tastes.Primarily caused by acetic bacteria.

    Nice lineup! Some things from today. Maybe my favorite champagne to date. I think I prefer Blanc de Noirs or Pinot-heavy champagnes. Checking in on this guy - this bottle is nicely integrated. Stems lend an interesting and savory character but it's well balanced. Liked it. Well done.
